3 Ingredient spicy satay sauce

Ingredients

  • 2 Tbsp Red curry paste (can adjust to your spice level)

  • 1/2 cup of peanut butter

  • 2 Tbsp soy sauce

  • Water to thin ~1/2 cup

    + 2 tsp sugar or sweetener, coconut cream or milk for a creamy version (1/4 cup)

Method

Whisk all ingredients in a pot to combine to a smooth consistency, simmer for about 5 minutes. Pour over your favourite noodles and vegetables.

As a dip - use less water and this recipe can also be a dip or drizzle for rice paper rolls, or tofu nuggets.
