Creamy Chickpeas (Chana Masala)
*Meal prep recipe - this makes 4-6 serves and freezes well.
This Quick Indian-Inspired Chana Masala is vegan, easy to make, and uses simple, affordable ingredients that the whole family will love!
Ingredients:
2 onions, roughly chopped
4-6 cloves garlic, diced
2 tsp garam masala
2 tsp ground cumin
2 tsp paprika
1 tsp chili powder (optional, adjust to taste)
2 cans (14.5 oz each) of diced tomatoes
2 cans (15 oz each) of chickpeas, rinsed and drained
Approx. 1 ½ cups (400 ml) coconut cream
2 grated carrots (or other veggies)
2 handfuls of spinach, chopped or use frozen
2 tbsp coconut sugar or brown sugar
To Make:
Sauté onions in 2 tbsp olive oil until soft and golden.
Add garlic and sauté for another 2–3 minutes.
Add the spices (garam masala, cumin, paprika, chili powder), and season with salt and pepper. Stir and cook for a few minutes to allow the spices to bloom.
Add the remaining ingredients (except spinach) and bring to a simmer. Cook for 15-20 minutes.
Add spinach or other greens and cook until wilted, about 2–3 minutes.
Optional Protein Swaps:
You can easily add 500g (about 1 lb) of cooked chicken breast or thighs (to replace chickpeas or use both). Simply dice and cook it with the onions and garlic
Serve with brown rice or naan bread
