Easy Peanut Noodles

Ingredients:

Noodles of choice - rice, soba, spaghetti anything goes!

3 heaped Tbsp peanut butter
1 Tbsp rice vinegar
About 2 Tbsp Juice of lime or lemon
2 Tbsp soy or tamari
1 Tbsp maple syrup or brown sugar
Ginger grated about 2 tsp
Garlic powder a little
Water
Optional - Add coconut cream or milk for a creamy version
Optional - Add Sriracha or chilli flakes, either added to the sauce or to serve

Method:

  • Whisk all the sauce ingredients together in a pot heating gently

  • Cook noodles as per packets instructions

  • Prepare vegetables and protein you want to serve with it - stir fry a mix of vegetables or use frozen.

  • Mix sauce through your noodles once it is the desired consistency and serve with your vegetables and protein, top with coriander and chopped peanuts.
