Vanilla Baked Protein Oats

Ingredients

Mix all together:

3 small ripe bananas mashed (or 2 large)

2 cups of oats (blitz in a blender briefly so more like flour texture)

½ cup almond meal

½ cup protein powder (I used vanilla pea protein)

1 tsp baking powder

4 Tbsp chia seeds

2-3 Tbsp maple syrup (depending if protein powder is sweetened or how sweet you want it).

Mix should be quite wet add extra milk if still looks a bit dry.


Add last once oat mix in the baking dish, swirl through 

3 Tbsp almond butter

~1 cup frozen berries

Top with chopped almonds


Bake at 180c for approx 40 minutes or until cooked through.


Keep in the fridge for up to 5 days or you can freeze individual portions.

Best served heated with some greek yoghurt.
